Today, I remember the long conversations that a bunch of college kids often discussed at the cafeteria table. Yes, it is me and my diverse group of friends. So what is the difference between a “vegan” and a “vegetarian” diet? Well, in addition to not consuming any animal meat, a vegan doesn’t eat eggs, dairy products or any other product derived from an animal. A vegan diet has several science-based benefits such as being richer in certain nutrients, lower risks of heart disease, lower blood sugar levels and improved kidney function. A vegan lifestyle is a growing trend and is supported by advancements in technology. Who thought that plant-based protein could replace the burger patties? Well, next time you visit Chipotle, do have a taste of the vegan menu.
